CLASSIC PHILADELPHIA CHEESECAKE


Classic cheesecake is a dessert that has stood the test of time.

Makes 16 servings, 1 piece (118 g) each.

INGREDIENTS:

  • 4 eggs
     

METHOD

Heat oven to 325ºF.
 
Mix crumbs, 3 Tbsp. sugar and butter; press onto bottom of 9-inch springform pan. Bake 10 min.
 
Beat cream cheese, 1 cup sugar, flour and vanilla in large bowl with mixer until blended.
 
Add sour cream; mix well.
 
Add eggs, 1 at a time, mixing on low speed after each just until blended.
 
Pour over crust.
 
 
Bake 1 hour 10 min. or until centre is almost set.
 
Run knife around rim of pan to loosen cake; cool before removing rim.
 
Refrigerate 4 hours.
 
 
TIPS:

How to Test For Doneness

Gently shake the pan. If the cheesecake is done, it will be set except for a small area in the centre that will be soft and jiggly. Do not insert a knife into the centre as this may cause the cheesecake to crack upon cooling.

Special Extra

Slice 2 cups fresh strawberries; arrange on top of chilled cheesecake. Brush with 2 Tbsp. melted strawberry jelly.
