MOM’S CINNAMON COFFEE CAKE


This recipe is ideal for a weekend brunch or Friday breakfast club at work, but we wouldn’t even mind having it for dessert after a weeknight dinner!

 

INGREDIENTS

  • 1 cup granulated sugar
  • 1/2 cup butter or margarine
  • 1 egg
  • 1 cup buttermilk
  • 2 cups sifted flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt

Crumbss for topping:

  • 1 cup packed brown sugar
  • 2 tbsp flour
  • 3 tbsp melted butter
  • 1 tsp cinnamon

DIRECTIONS

  1. Cream butter and sugar, then add egg. Add the dry ingredients alternately with buttermilk and soda.
  2. Pour half of batter into greased pan and sprinkle with half of crumbs. Then put remaining batter on top and top with remaining crumbs.
  3. Bake in 8″ x 12″ pan in 350 F oven for 30 min or longer.
  4. Crumbs for Topping: Mix together
