MOM’S RICE PUDDING (BUDINO DI RISO)

One sweet taste and you’ll be reminiscing about the good ol’ days in the kitchen making Mom’s Famous Rice Pudding!

INGREDIENTS

  • 3/4 cup uncooked rice
  • 2 cups milk
  • 1/3 cup sugar
  • 1/4 tsp salt
  • 1 beaten egg
  • 2/3 cup craisins
  • 1 tbsp butter
  • 1/2 tsp vanilla

DIRECTIONS

  1. Bring 1-1/2 cups water to boil and stir rice into boiling water. Reduce heat to low, cover and simmer for 20 minutes.
  2. In a clean pan, combine cooked rice, 1-1/2 cups milk, sugar and salt. Cook over medium heat until thick and creamy, 15 to 20 minutes.
  3. Stir in remaining 1/2 cup milk and beaten egg. Add craisins, and cook 2 minutes, stirring constantly.
  4. Remove from heat, stir in butter and vanilla.
