Coming to you directly from Sicily, this fun and festive salad will bring a touch of color to your Christmas table.
- 10 oz chicory, sweet
- 10 oz celery
- 2 tablespoons capers
- 2 tablespoons olive verdi
- 1 orange
- 1 lemon
- 1 pomegranate
- 2 tablespoons extra virgin olive oil
- salt to taste
Wash and trim the chicory and celery.
Then blanch separately in boiling water. Drain and let cool.
Once cold, place the vegetables in a salad bowl and add well-rinsed capers and pitted olives, chopped.
Mix well, then toss with extra virgin olive oil.
Transfer the salad to a serving dish.
Place orange and lemon slices on top of your Christmas salad, then cover with pomogranate seeds.
